Southern Staples Made Simple

If there's one meal that's on our weekly menu without fail, it's Chicken Pie. We serve it over rice with green beans, macaroni and cheese, creamed corn, and depending on the season, sliced ripe tomatoes on the side... SO GOOD! Did I mention Banana Pudding' for dessert? That too.


After making this live on Facebook with my daughter (see that here, it's a bit of a comedy show, but we are who we are 😁), I wanted to share the whole menu with you. It's one that your family will LOVE and doesn't take you days to make (but tastes like it did!).



Chicken pie:

Add to 9x13 pan-

• 1 lb shredded chicken

• 2 cans cream of chicken soup

• 1 cup chicken broth

• salt + pepper to taste


Melt 1/2.cup butter, mix with 1 cup self-rising flour and 1 cup buttermilk.

Spoon over chicken and spread evenly to form crust.


Bake in 350° oven for 45 min (until brown).

Serve over Jasmine rice (best cooked in the Instant Pot! 3 cups rice + 3 cups water = 4 minutes high pressure)



Banana Pudding:

Layer trifle bowl with Nilla wafers, sliced bananas (4), and pudding mixture:

• 2 cups milk

• 1 cup sour cream

• 1 container cool whip

• 1 box instant vanilla pudding
